An urban distillery in the heart of Phnom Penh

The Ampov distillery has become known for its artisanal approach to pure cane rum in Cambodia. Located in Phnom Penh, it promotes endemic local cane grown in accordance with traditional agricultural methods. This cuvée, awarded a silver medal at the 2025 Rhum Fest Awards, testifies to the distillery's desire to produce authentic spirits, marked by their terroir.

Precise elaboration from field to distillation

Ampov Wild Rum is made from canes that have been cut by hand just before full maturity in order to obtain a high concentration of sugars. After individual washing, the canes are pressed the same day, ensuring a pure juice without acidification. Spontaneous fermentation precedes distillation in a pot still. The rum is then matured for several weeks in demijohns before being slowly reduced and bottled at the distillery.

Flavour profile

This lively, dry and powerful rum has a frank attack with slightly salty and peppery accents. The palate reveals notes of ripe fruit, accompanied by citrus zest, mango and lychee. The whole retains a beautiful freshness. It can be enjoyed neat to appreciate all its complexity or used as a Ti' Punch for an original interpretation of agricultural rum.
