Indeed, the extremely long fermentation, from exogenous yeasts of 11 days allowed this rum to develop an incredible aromatic profile, we are talking here about a rum containing a huge rate of more than 498 g of volatile substance per hectolitre of pure alcohol. It was then slightly reduced with spring water from 75.2% (still output) to 66.9%, and rested in stainless steel vats for 15 long years: this gives it a superb integration of alcohol, as well as developing an incredibly rich aromatic palette. In order to understand the impact of the discount on rum, the team at bar 1802 and Anthony Martins chose to bottle this rum, which is available in 100 copies for the 66.9% version.
