Indeed, the extremely long fermentation, from exogenous yeasts of 11 days allowed this rum to develop an incredible aromatic profile, we are talking here about a rum containing a huge rate of more than 498 g of volatile substance per hectolitre of pure alcohol. It then underwent a slow reduction to lower the alcohol content to 55.6%, and rested in stainless steel vats for 15 long years: this gives it a superb integration of the alcohol, as well as developing an incredibly rich aromatic palette. In order to understand the impact of the discount on rum, we have chosen to bottle this rum available in 100 copies for the 55.6% version at 35cl, Sélection de l'équipe du bar 1802, the largest rum bar in France.
