When Jacques Bally bought the Lajus company in 1917, he relied entirely on the ageing of cane juice to create unmistakably aged rums .
The bet is on and it is met with flying colours, and for good reason; It was cognac that he borrowed the ageing technique. He used white oak barrels, from Limousin, for the aging of his rum.

J.Bally is one of the oldest distilleries in Martinique. Its rums are characterized by the finesse of their aromas, a good roundness in the mouth and a great fruity richness.
