And although we cannot divulge the name of the distillery, we can say that this rum is made from locally grown sugarcane molasses, undergoes open fermentation for a period of 36-48 hours with a proprietary yeast strain, before being distilled in a column again, from which they are able to produce both lighter and heavier brands. This particular rum has been aged for 6 years in Panama and another 7 years in a continental climate in an ex-bourbon cask.
