Distilled during the 2006 sugar season, this rum was aged on April 5, 2007 in old cognac barrels in the heart of the Savanna cellars, and was finally matured for more than 12 months in a wet cellar in an oak barrel that had previously contained great port wines. The care taken in its ageing a few steps from the Indian Ocean, the choice of barrels and the alchemy of tropical aging gives this exceptional rum its elegance, concentration, fragrances and all the nobility of a rare and artisanal spirit. An old gold dress with coppery reflections testifies to the long years of aging and a few months finally spent in contact with a wood that has already contained Port. The unctuous, fruity nose exudes a finesse of aromas subtly marked by the cane then a spicy bouquet tinged with almonds of very ripe fruit discreetly reveals his stay in barrels of sweet wine. On the palate there is a rich and complex character, with well-integrated cane plant flavors, a clear sweetness and an elegant woody. The final is balanced; Spices and notes of candied fruit mixed with caramelized cane sugar permeate the empty glass
