What does Captain's Choice involve?
The Captain's Choice is a special series in limited quantities. It is literally the cream of rum, which only the captain has the privilege of selecting. Naturally, what distinguishes it from other bottles is not limited to the fact that it is still barrel. But obviously, the captain keeps some puzzles to himself...!
And on the side of the elaboration of this rum?
Following a tripled maturation process and after a sufficient period of time, a precious barrel of Palo Cortado Sherry sublimated this Caribbean distillate on its return journey.
But previously, this Tres Hombres rum had been matured in bourbon barrels according to the Solera method.
Nearly 5,000 nautical miles across the North Atlantic have infused enough epics to give this rum a superior quality, continuously refined, when it disembarks in Amsterdam.
For the maturation of rum, Oliver & Oliver uses the Solera technique. The term "Solera" itself already evokes impressions of rum even before its tasting.
What is the Solera method?
Originating in Spain, the Solera method is used for various beverages, sherry being the most iconic, and perhaps the most unexpected balsamic vinegar. The ultimate goal is to create a consistent, reliable and therefore high-quality concoction.
In Spanish, "solera" actually means "on the ground". In this distinctive maturation technique, barrels are arranged in layers from the ground, with the lowest layer containing the oldest liquid.
The layer just above, called the first criaderas (or "nurseries"), contains a middle-aged beverage, while the second criaderas, at the top of a three-tiered configuration, contains the most recent liquid.

The visual design of this exceptional bottle was imagined by a sailor of the crew. The refined illustration evokes the majestic bow of the Tres Hombres.
