The authentic character of the Clairin Le Rocher Ansyen 2017

The 2017 Le Rocher Ansyen Clairin embodies the essence of Clairin rums, produced in an artisanal way in Haiti. Made from non-hybrid sugar cane varieties grown without chemicals, this rum benefits from spontaneous fermentation and distillation on a still, over direct fire, guaranteeing a raw and authentic distillate. This 2017 vintage was then aged for 27 months in a cask that had previously contained whisky, giving the rum woody and slightly spicy nuances. Although the Clairin is usually consumed white, this aged version represents a turning point in Haitian production, marking a new era for this spirit with even more refined aromas and a more complex texture, while maintaining the vibrant and authentic character of the Clairin.
