Sajous, the reference clairin

The Clairin Sajous is produced at the Chelo distillery, located in northern Haiti. Michel Sajous, the distiller, cultivates his own sugar cane fields according to traditional and organic practices. The juice is pressed, fermented spontaneously for several days using indigenous yeasts, and then distilled in an artisanal still. The Clairin Sajous is considered by many enthusiasts to be the reference clairin in the Velier range.

An intense and complex profile

This 2023 batch reveals a powerful and herbaceous nose: green sugar cane, aromatic herbs, olive, lime and wet earth. The palate is dense and textured, with notes of tropical fruits, pepper, ginger and pronounced marine salinity. The finish is long, mineral and spicy. A clairin of character, raw and uncompromising, which embodies the quintessence of the artisanal Haitian cane spirit.
