Clairin Casimir Ansyen 2017 cask ex-rum CA17MG-1

Composed of white Hawaii and red Hawaii, two non-hybrid varieties of sugar cane, the Casimir plantation is located in Baradères, at the western tip of Haiti. It belongs to Faubert Casimir, who is considered one of the greatest distillers in the region.

Each cane is harvested only when it is fully ripened. In order to develop the aromatic richness of its clairins, during fermentations, lemongrass, cinnamon and sometimes ginger leaves are added to cane juice. Like wines made from pre-phylloxera vines, this version, aged for twenty-two months in a barrel that has contained rum, has a touch of mouth of incredible delicacy that magnificently highlights the terroir that gave birth to it.

Made only in Haiti, Clairin is a brandy produced from sugar cane, just like agricultural rum.
