It has a particular personality and a unique typicity thanks to a long fermentation of 5 to 6 days, the use of oenological yeasts, then a distillation in our all-copper still equipped with a small column, and finally a few days in oak barrels (previously used for Cognac).

The result of a long process in the cellar, this pure cane juice rum has been patiently crafted with the same care and passion that goes into each of our creations. Bottled by hand, "Renaissance" is presented in a numbered decanter.

This 2025 vintage was produced at the Habitation du Simon and produced in +/- 3000 copies.

Our tasting notes for Renaissance - Millésime 2025

Nose : Au nez, le montant est souple, arrivent alors des notes complexes de canne fraîche, de fleur d’oranger et de crème pâtissière.

Palate : En bouche, l’attaque est soyeuse, nous retrouvons alors la canne mâchée, puis arrivent les saveurs de meringue et de vanille accompagnées de notes florales.

Finish : La finale est gourmande et tout en douceur.
