A unique artisanal project in mainland France

The Ferroni - Flamant Rum - 4th harvest 2024 illustrates the meeting between agricultural tradition and distilling excellence. This cuvée comes from old sugar cane, grown in Hyères-les-Palmiers by Kévin Toussaint, a young committed producer. Harvested by hand, the cane is pressed on site using a Cape Verdean machine, then the juice is fermented for 11 days. Distillation is carried out over a wood fire, in a nineteenth-century iron still located at the Château des Creissauds in Aubagne.

This fourth batch benefits from a particular maturation: a slow reduction and a four-week rest in demijohns, accentuating the aromatic expression.

Tasting notes

On the nose, the profile is intensely vegetal, revealing all the freshness of the cane. On the palate, the rum reveals a gourmet texture marked by lime and a subtly iodized finish, bringing a beautiful complexity.
