Michel Couvreur, the iconoclast of Burgundy whisky
Originally from Belgium, Michel Couvreur moved to Burgundy in the 1970s with a bold idea: to age Scotch whiskies in Burgundy cellars, in sherry barrels. This continental ageing, in conditions of temperature and humidity different from Scotland, produces whiskies with an assertive personality. Today, the house continues this heritage with the same high standards, without cold filtration or added dyes.
Overaged, patience as a cardinal virtue
As its name suggests, this Overaged has benefited from prolonged ageing beyond the usual standards, exclusively in sherry casks. The colour is dark, with mahogany reflections. The nose reveals intense aromas of dried fruits, currants and oriental spices. On the palate, the richness is remarkable: dark chocolate, candied orange, walnuts and fine woodiness follow one another with fullness. The finish is long, warm, with a trail of persistent sherry .

Michel Couvreur is an independent bottler of Scotch whisky whose ageing cellars are located in Bouze-lès-Beaune, Burgundy. This maestro of blending and maturing considers that "90% of the quality of a whisky comes from the barrel, and only 10% from the distillation process"
