Essentially, these dsitillats express the raw, natural beauty of Haiti. Patrick St. Surin, who lives at the Carrefour des Pères, a small town about thirty minutes by car from Cap-Haïtien. Here, the plateau that forms much of the middle of the island gives way to the plains that reach the Caribbean Sea to the north. He cultivates just over ten hectares of sugar cane, and has been distilling since 2012, when he decided against his father's wishes to stay in his hometown to start his business. As Patrick says, he didn't see success as an exit from Haiti. Instead, he saw the opportunity to succeed on his own terms.

The fields surrounding the distillery are replenished with the aforementioned ten hectares of sugar cane planted with local sugarcane varieties like Medialande, Pete Coca, Zariete grown by Patrick. On top of that, there are a few acres cultivated by neighbors that allow him to harvest cane in exchange for allowing their cattle and goats to graze freely around the property. Once the cane is harvested - the months considered to produce the highest quality sugarcane are February-mars and July-August - it is brought back to the distillery by a donkey and immediately crushed. The juice is then poured manually into large open-air fermenters called rooms where a small addition of sugarcane syrup is added in the local tradition. Fermentations occur naturally and usually take 10 to 15 days. From there, the fermented cane juice is loaded into a small still and is distilled twice, rested, and then bottled by hand. The result is one of the purest expressions of sugar cane we have ever tasted.

Note that on the back of the label, a cut has been made by the importer, this is completely normal and it is the condition for obtaining this very rare rum in France.

Made only in Haiti, Clairin is a brandy produced from sugar cane, just like agricultural rum.
