History of the Chelo distillery

The Chelo distillery, founded in 2004 by Michel Sajous in Saint-Michel de l'Attalaye, perpetuates a family tradition that has been rooted for half a century. Surrounded by 30 hectares of plantations, it exclusively grows non-hybridized crystalline cane. This approach, combined with the use of indigenous yeasts and a still heated over an open fire using bagasse, gives his rums a unique authenticity.

Presentation of this small batch

Resulting from a natural fermentation of five to eight days, this clairin is distilled in accordance with traditional Haitian methods. The 2020 Vieux Sajous 5 Year Old vintage benefits from a five-year complete ageing in a tropical climate, revealing a rich and intensely structured profile. It is offered in a limited edition of 3,700 bottles, with a natural alcohol content of 59.5% vol.

With an assumed freedom of tone, this rum expresses itself with originality: medicinal accents, pharmaceutical touches and spicy flights build a singular palette, emblematic of the inimitable style of the Chelo distillery.
