The History and Origins of American Whiskey

The production of whiskey in the United States dates back to the time of the first European settlers, who brought their distillation know-how with them. Over the centuries, whiskey production has flourished in different regions of the United States, notably in Kentucky and Tennessee, where some of the most iconic whiskies are produced today.

In the early 20th century, Prohibition caused a temporary halt to legal whiskey production in the country, yet this only heightened its prestige and popularity. At the end of this dark period, the demand for American whiskey was such that new distilleries emerged, giving rise to a true golden age for this spirit.

The Main Categories of American Whiskey

Beyond its fascinating history, American whiskey is characterized above all by its diversity. Several main categories are distinguished, each with its own characteristics and production methods.

Bourbon

Bourbon is undoubtedly the most famous and widely distributed American whiskey in the world. Originating from Kentucky, this whiskey takes its name from Bourbon County, where it was first produced in the 18th century. To be classified as bourbon, a whiskey must adhere to certain strict rules:

  • Be produced in the United States
  • Contain at least 51% corn in its composition
  • Be aged in new charred oak barrels
  • Not be distilled to more than 80% alcohol by volume (160 proof)
  • Be bottled at a minimum of 40% alcohol by volume (80 proof)

This production method imparts sweet and sugary flavors to bourbon, with notes of vanilla and caramel derived notably from the oak barrel aging.

Rye Whiskey

Rye whiskey, another category of American whiskey, has experienced a true resurgence of interest in recent years. As the name suggests, this type of whiskey must contain at least 51% rye in its composition, giving it a spicier and bolder taste compared to bourbon.

Rye whiskey is particularly appreciated for classic cocktails such as the Old Fashioned or Manhattan. There are also smoother and sweeter versions of rye whiskey, referred to as "high-rye," which contain a higher proportion of rye.

Tennessee Whiskey

A close relative of bourbon, Tennessee whiskey is primarily produced in the state of Tennessee and follows the same production rules as bourbon in terms of composition and aging. The main difference lies in an additional filtration step called the "Lincoln County Process," which involves passing the whiskey through a layer of maple charcoal before placing it in barrels.

This method imparts a smoother and slightly smoky taste to Tennessee whiskey, making it highly appreciated by enthusiasts. The most famous Tennessee whiskey is undoubtedly Jack Daniel's.

Other Types of American Whiskey

In addition to these three main categories, there are many other types of whiskey produced in the United States, such as:

  • Corn whiskey, a whiskey made from corn (at least 80%) that is either unaged or aged in previously used barrels
